Mussakhan is a popular Palestinian dish that contains chicken, Onion, and bread. What sets this dish apart is a spice called Sumaq. I decided to my make my own version and turn it into a roast.

Ingredients:

3-4 onions
2 whole chickens
Olive oil
Sumaq Spice
Taboon Bread or pita bread
Fried Pine nuts for decoration
preheat oven to 200c (400f)
Clean the chicken really well from inside and out, dry the chicken with a paper towel and set aside. Cut 2-3 onions into cubes, place in a roasting pan, add a little bit of olive oil and a pinch of sumaq spice.Slice one onion into thin slices, add a little bit of sumaq spice and olive oil , mix and set aside.Place the chicken on top of the onions, rub a little bit of olive oil on the chicken. Stuff the sliced onions inside the chicken, cover the chicken with sumaq and rub with your hands . Cook the chicken for 1 hour and 15 minutes or until chicken is cooked.

Add taboon bread to a plate add the onions and the juice and then add the chicken, decorate with the pine nuts.
