Anybody who knows me, knows that I am obsessed with this salad. I could eat this all day. It is a very popular salad in the Middle East. Its basically Parsley, Tomatoes, and cracked Wheat. Simple but really good.


5-6 bunches of parsley

4 tomatoes diced

1-2 tablespoon of chopped mint

dice 1/2 onion

1/3 cup of cracked wheat

2 lemons

olive oil

salt to taste

Wash the parsley the night before you make them , and place them on a towel to dry over night .

The next day chop the parsley really well , and set aside in a large bowl , add the tomatoes  , mix.

Add a tablespoon or two of chopped mint  , dice 1/2 onion and mix well. Soak the cracked wheat in water for 2 minutes then remove the water, add a whole lemon juice and a little bit of olive oil , leave for 10-15 minutes Add the cracked wheat and mix add a little bit of olive oil (to taste ) squeeze half a lemon or a whole lemon (to taste ) and salt to taste . Adjust olive oil and lemon to taste mix well
