Ouzzi is a popular dish in the middle east , you could either have it with phyllo pastry or without it . It contains rice , minced meat , green peas , carrots and almonds . This is a great meal for having family and friends over . It goes well with salad .

Recipe:

onion chopped

1 tablespoon of vegetable oil

1/2 kg minced beef

1 1/2 cup of white long grain rice

2-3 cups water or chicken stock

1/4 cup pine nuts
1/4 cup almonds
1 teaspoon of all spice
1/4 teaspoon of white pepper
1teaspoon of paprika
1 teaspoon of chili pepper
1 teaspoon ofnutmeg
1 teaspoon of salt or more
1/2 teaspoon of Cinnamon
 phyllo pastry sheets
egg to brush
Chop 1 onion ,  cook the onions and minced meat in 1 tablespoon of vegetable oil in a large pan and cook until the meat is cooked Soak and wash the rice in water for 15 minutes rinse and drain . Add the rice to a pot and add all of the spices ,and fry the nuts in vegetable oil until golden in color then add it to  rice , add all the fried nuts and meat to the rice give.Also add the vegetables and give it a good mix and add the chicken stock until it covers the rice, and salt to taste
Cook on high until it bubbles,  lower the heat on lowest setting , cover,  and cook until the rice is cooked.
preheat oven at 180c
Once the rice is cooked , let it cool down in a small dish add 2 sheets of phyllo pastry . Spoon some of the rice and meat mixture inside,  and bring the sides of the pastry together and seal brush a little bit of egg .
add it to a greased baking pan, and brush the pastry with  1egg yolk and 1 tablespoon of water
and bake the bundles until golden in color. Serve with a classic arabic salad

Tabouleh

Anybody who knows me, knows that I am obsessed with this salad. I could eat this all day. It is a very popular salad in the Middle East. Its basically Parsley, Tomatoes, and cracked Wheat. Simple but really good.

Recipe:

5-6 bunches of parsley

4 tomatoes diced

1-2 tablespoon of chopped mint

dice 1/2 onion

1/3 cup of cracked wheat

2 lemons

olive oil

salt to taste

Wash the parsley the night before you make them , and place them on a towel to dry over night .

The next day chop the parsley really well , and set aside in a large bowl , add the tomatoes  , mix.

Add a tablespoon or two of chopped mint  , dice 1/2 onion and mix well. Soak the cracked wheat in water for 2 minutes then remove the water, add a whole lemon juice and a little bit of olive oil , leave for 10-15 minutes Add the cracked wheat and mix add a little bit of olive oil (to taste ) squeeze half a lemon or a whole lemon (to taste ) and salt to taste . Adjust olive oil and lemon to taste mix well

Honeycomb Bread

Do you love bread? Do you love cheese?   I have the perfect recipe for you. It’s called honeycomb bread and its so delicious. Its great for family gatherings. Don’t expect to have leftovers because these go fast 🙂

Recipes:

3½ cups of flour sifted

2 tablespoon of milk powder

3 tablespoon of sugar

1½ teaspoon of instant yeast

4 tablespoons of olive oil

1 cup of milk warm

4 tablespoon of melted butter

Any type of cheese cut into small squares or balls

1 egg mixed with 2-3 tablespoons of milk to brush the bread

Add sifted flour to a large bowl , add the milk powder , sugar , yeast and oil . Slowly add in the milk and melted butter .

Knead the dough for 15 minutes by hand or 10 by machine .  Cover and set aside for 1 hour or until it doubles in size .

Roll the dough into a thin log shape and cut into small balls , add a small piece of cheese in its center. Bring the edges together , form a ball so that the cheese is completely enclosed. Place in your baking tray and cover for another 30-40 minutes it will double in size.
Brush the bread with egg and milk brush all over the bread and add sesame seeds on top of the dough, you can use white or black sesame seeds.

preheat your oven to 180 C and bake for about 20-25 minutes, or until the bread is nice and golden on top.

Beef Stroganoff

Beef stroganoff is the perfect meal for those cold days, you can either eat this with egg noodles or white rice(Both are good!)I cook the beef for hours because it comes out very tender and juicy. Very comforting  🙂

Recipe:

a tablespoon of olive oil

1 lb of lean beef cut into strips or chunks

1 medium onion, diced

3-5 cloves of garlic minced

salt and black pepper to taste

1-2 teaspoons of thyme

4 cups beef broth

3 cups of mushrooms

1-2 tablespoons Dijon mustard

3-4 Tablespoons of sour cream

egg noodles or white rice .

In a sauce pan add the oil then add meat and stir , add  onion , garlic  , salt and black pepper to taste and  thyme

add the ingredients to the meat and stir. Add beef broth and cover and cook for 4 hours on low heat.

Cut the mushrooms up into slices , in a pan heat a tablespoon of olive oil  over medium heat and saute mushrooms until golden brown.

Add the beef mixture to the mushrooms and mix well ,add  Dijon mustard , Worcestershire sauce , and sour cream .

Cook the egg noodles according to the instructions on the packet , once the egg noodles are cooked add to the mushrooms and meat and mix well . Enjoy

Broccoli and cheese soup

Nothing like a hot bowl of soup to warm you up during those cold winter days. Instead of going to Panera Bread all the time to  have this soup , I decided to make it at home . I found  a similar recipe online and added my touch to it. Sooo yummy

Broccoli and cheese soup:

1 tablespoon melted butter + 1 tablespoon of butter

1/4 cup of flour

1 cup of milk

1 cup of heavy cream

2 cups of chicken stock

chopped broccoli

carrots sliced

1/2 medium

chopped onion

1/4 teaspoon of nutmeg
salt and pepper to taste

1/2 cup of sharp cheddar cheese

In a medium sauce pan add add 4 tablespoons of butter on medium heat , add the flour and mix with a whisk and cook for 2 minutes . Add the milk and cream and chicken stock bring to a simmer for about 20 minutes. Add the broccoli and carrots , in a separate small pan add 1 tablespoon of butter once the butter has melted add the onions and cook until the onions are translucent . Add the onions to the soup and mix . Add the nutmeg and salt and pepper to taste, cook it for 20 minutes .Add the cheese and mix well . Serve 🙂 

Falafel

Falafel is my favorite appetizer and its even better with hummos and pita bread. I never made Falafel when I was living in Jordan because its everywhere. But since I moved to texas, I had to learn how to make Falafel from scratch :-(.  My husband really enjoyed them especially during Ramadan. Give it a try 🙂

Falafel :

1 1/2 cup of chickpeas soaked in water overnight

Pinch of baking soda

1 chopped onion

1 garlic cloves

1 teaspoon of coriander spice

1 cup of fresh coriander

1 teaspoon of baking soda

1 teaspoon of salt

1/2 teaspoon of cumin

Vegetable oil to fry the falafel.

Add the chickpeas to water and soak overnight, drain the water from time to time. add a little bit of baking soda .The next day drain the chickpeas from the water

Add the chickpeas to a food processor , add the chopped onion , garlic cloves, coriander spice , fresh coriander and baking soda, salt ,cumin .Blend well

Shape the mixture into form of small balls and set aside. Heat the vegetable oil , once the oil is hot add the falafel and fry until golden in color. Serve Hot

Zebra Cake

The most thing I love about this cake  is how it looks. It looks complicated but it’s not . One of the most popular recipes on Wara’ 3anab, I really recommend you to try this.  Your friends and family will love it 🙂

Recipe :

4 eggs room temperature

1 cup of sugar

1 cup of milk ( room temperature)

1 teaspoon of vanilla

1 cup of vegetable oil

2 cups of flour

1 tablespoon baking powder

2-3 tablespoons of cocoa powder

Preheat oven to 180c

In a large bowl add 1 cup of sugar and add the 4 eggs and mix with an electric whisk until its mixed .  Slowly add in the milk and the vanilla . Then add in the vegetable oil and mix .

In a separate bowl add the flour , baking powder , then slowly add the dry ingredients to the wet , once its mixed set aside do not over mix

Separate the mixtures evenly into two bowls and add to one of them 2-3 tablespoons of cocoa powder, mix

Butter the pan , add a parchment paper on the bottom of your 8 inch cake pan , I used a springform pan
Add 3 tablespoons of the vanilla batter into the middle of the baking pan. Then add 3 tablespoons of chocolate batter and pour it in the center on top of the vanilla batter. Add another 3 tablespoons of vanilla and so on . Repeat with all of the batter until you are done with  the batter.
Do not tilt your pan , it will spread just by adding your batter on top of each other .

*Tip
Hold the cake pan about 3 inches above the counter and let it drop flat on the counter. Do it once or twice; that should force the air bubbles up to the surface of the batter.

*Optional:
You can decorate the top part of the cake by using a long wooden stick or a toothpick
Just run lines from the middle to the end.

Bake for 40 minutes or until you insert a toothpick and comes out clean. Once the cake is ready , run a knife around the edges. Remove from the pan after 10 minutes
and let it cool completely before slicing it .
