I made this cake for my husband’s birthday since he really likes light cakes so I decided to make a very light vanilla cake with frosting :-). It’s so light and fluffy and its my favorite vanilla cake recipe. You can decorate this cake any color you want (I chose 2 shades of blue).

Birthday vanilla cake

2 1/2 cups of cake flour (Sifted)
1 3/4 cups of sugar
1 tablespoon + 1 teaspoon of baking powder
3/4 teaspoon of salt
170 grams of butter  at room temperature
1/2 cup of milk ( room temperature) + 1/4 cup of milk
2 1/4 teaspoons of vanilla
5 egg whites at room temperature

Frosting:

(375 g) of butter, softened and cut into cubes
1 tablespoon of vanilla extract
a pinch of salt
3 tablespoons of milk
3 1/2 cups of powder sugar (sifted)
Preheat oven to 350F

Sift the cake flour in a mixer or use a electric whisk , add sugar, baking powder and salt. Slice the butter into thin slices and mix in with flour . Add 1/2 cup of milk .
In a cup add the milk , egg whites, and vanilla . Add the mixture slowly into the dry ingredients.
2 cake pans greased with butter and add flour. Add the cake batter equally and bake for 25-35 minutes or until stick comes out clean.
Then set aside for 10 minutes
place on a wire rack to cool completely.
To make the frosting:
Add the butter to a mixer or use a hand electric whisk, mix for 5 minutes until creamy, add vanilla,salt and milk.
Sift in the powdered sugar and mix well for  6 minutes until its fluffy.
To decorate:
Flip the cake , and add a little bit of frosting spread it all over the cake, add the 2nd cake add more vanilla frosting and spread it all over the cake creating a thin layer . Place in the fridge for 1 hour.
Divide the frosting in two bowls, add 1 drop of food coloring and mix
add more drops of food coloring to the other creating different shades of blue. Add the light color on top of the cake and cover the top and the top part of the sides, add the dark blue frosting on the bottom of the cake and spread it all over the bottom part.

Blueberry Pound Cake

This cake is one of my favorite cake recipes ever, its delicious and light. The taste of blueberries and lime is just perfect together .  Just thinking about it makes my mouth water.

Blueberry Pound Cake

2 1/3 a cup of flour sifted
1 1/2 tsp baking powder
a little bite more than 1/4 tsp of salt
1 3/4 cups of sugar
zests of 2 limes
70 grams of softened cream cheese
227 grams of softened butter
4 eggs (room temperature) 1 extra yolk
2 cups of blueberry

 Frosting:
3/4 cup of sugar powder
 2-3 tablespoons of lime juice


Sift the flour into a large bowl, add baking powder salt and mix set aside . In a food processor add the sugar and the lime zest mix until its blended set aside. Add the following ingredients to your electric mixer, cream cheese & butter, mix until light and fluffy. Add the sugar mixture in, add the eggs each at a time while mixing. Slowly add in the flour until its all mixed.
Preheat oven to 350f
Fold in the blueberries , grease the cake pan well with butter and dust with  flour.
Pour the batter evenly , and bake for 50-55 minutes.
Make sure the cake cools down completely before adding frosting.
for the frosting add the sugar +  lime juice mix well and pour over the cake
