I love mushrooms. I love the smell and the taste of it. So you can imagine how much I love this soup. Its one of my favorite soup recipes……MMMM I wish I can have some right now 😦

Mushroom Soup

2 pounds white or brown button mushrooms, sliced
1/4 cup of butter
1 onion chopped
1 tablespoon of flour
Thyme
4 garlic cloves
4 cups of chicken stock
1 cup of water
1 cup of heavy cream
Salt and pepper to taste

Slice the mushrooms, add  butter to a large sauce pan and cook on medium heat until it melts.
Add the mushrooms sprinkle with salt, the mushrooms will release water, cook it for a while until all the water has evaporated.
Add the chopped onion,add 1 heaping spoon of flour and mix well and cook for 2 minutes.
Add thyme tied up in a string so you can remove it easily once your done, add the garlics, chicken stock and water.
Cook for a while until the vegetables are tender,  you could either add the soup to a blender or use a hand puree to blend it.
Add the cream and bring it back to the heat for 2-3 minutes and serve 🙂

This is a very popular appetizer in Jordan. It contains tomatoes, green chili, onion, and spices. The way its eaten is by dipping the pita bread into the dish. You can also enjoy this with other dishes such as scrambled eggs, hummos and/or falafel .

Tomatoes in a pan :

2-3 Tablespoons of olive oil
1 onion diced
3-4 garlic minced
4-5 tomatoes (peeled & remove seeds)
2-3 green chili’s chopped
2 teaspoons of tomato paste

In a pan add the olive oil once its hot add the onion and cook until onions are softened. Add the garlic and cook for 2 minutes.
Add the tomatoes and chili cover with a lid until the tomatoes start to release its own juice .Add Tomato paste mix and cook for another 3-4 minutes . Serve with pita bread
