Musakhan Roast (chicken and onions)

Mussakhan is a popular Palestinian dish that contains chicken, Onion, and bread. What sets this dish apart is a spice called Sumaq. I decided to my make my own version and turn it into a roast.

Ingredients:

3-4 onions
2 whole chickens
Olive oil
Sumaq Spice
Taboon Bread or pita bread
Fried Pine nuts for decoration
preheat oven to 200c (400f)
Clean the chicken really well from inside and out, dry the chicken with a paper towel and set aside. Cut 2-3 onions into cubes,place in a roasting pan, add a little bit of olive oil and a pinch of sumaq spice.Slice one onion into thin slices, add a little bit of sumaq spice and olive oil , mix and set aside.Place the chicken on top of the onions, rub a little bit of olive oil on the chicken. Stuff the sliced onions inside the chicken, cover the chicken with sumaq and rub with your hands . Cook the chicken for 1 hour and 15 minutes or until chicken is cooked.

Add taboon bread to a plate add the onions and the juice and then add the chicken, decorate with the pine nuts.

You can find this type of bread in every middle eastern house hold , its great for dipping hummos , cheese , etc..

and great for sandwiches , you can find this in any bakery but nothing  beats home made bread , not only will your house smell amazing it tastes incredible . I hope you will give it a try

Recipe

1 cup of warm water
1 1/2 teaspoon of sugar
1 tablespoon of yeast
4 cups of flour
2 cups of wheat flour
2 tablespoons of powder milk
1 teaspoon of baking powder
2 teaspoons of salt
2 tablespoons of olive oil
2 tablespoons of vegetable oil

In a small bowl Add  warm water and sugar, mix in the yeast . Mix well and set aside for 10 minutes.
In a separate large bowl add the all purpose 
 flour and wheat flour , powder milk , baking powder and salt . Mix well
Slowly add the yeast mixture in the flour mixture , add in the oil , Knead the dough either on a machine or by hand until nice and smooth. Add oil in a bowl cover the dough with a little of oil and cover place in room temperature for 1 hour or until it doubles in size.
Cut the dough into equal parts i got 10 , place on a baking tray cover for another 30-40 minutes.

Preheat oven to the highest temperature , and with a rolling pin flatten out the dough into round shapes and place  the oven for 6-7 minutes don’t forget to flip it on the other side once its golden

Ouzzi is a popular dish in the middle east , you could either have it with phyllo pastry or without it . It contains rice , minced meat , green peas , carrots and almonds . This is a great meal for having family and friends over . It goes well with salad .

Recipe:

onion chopped

1 tablespoon of vegetable oil

1/2 kg minced beef

1 1/2 cup of white long grain rice

2-3 cups water or chicken stock

1/4 cup pine nuts
1/4 cup almonds
1 teaspoon of all spice
1/4 teaspoon of white pepper
1teaspoon of paprika
1 teaspoon of chili pepper
1 teaspoon ofnutmeg
1 teaspoon of salt or more
1/2 teaspoon of Cinnamon
 phyllo pastry sheets
egg to brush
Chop 1 onion ,  cook the onions and minced meat in 1 tablespoon of vegetable oil in a large pan and cook until the meat is cooked Soak and wash the rice in water for 15 minutes rinse and drain . Add the rice to a pot and add all of the spices ,and fry the nuts in vegetable oil until golden in color then add it to  rice , add all the fried nuts and meat to the rice give.Also add the vegetables and give it a good mix and add the chicken stock until it covers the rice, and salt to taste
Cook on high until it bubbles,  lower the heat on lowest setting , cover,  and cook until the rice is cooked.
preheat oven at 180c
Once the rice is cooked , let it cool down in a small dish add 2 sheets of phyllo pastry . Spoon some of the rice and meat mixture inside,  and bring the sides of the pastry together and seal brush a little bit of egg .
add it to a greased baking pan, and brush the pastry with  1egg yolk and 1 tablespoon of water
and bake the bundles until golden in color. Serve with a classic arabic salad
