I love mushrooms. I love the smell and the taste of it. So you can imagine how much I love this soup. Its one of my favorite soup recipes……MMMM I wish I can have some right now ūüė¶

Mushroom Soup

2 pounds white or brown button mushrooms, sliced
1/4 cup of butter
1 onion chopped
1 tablespoon of flour
4 garlic cloves
4 cups of chicken stock
1 cup of water
1 cup of heavy cream
Salt and pepper to taste

Slice the mushrooms, add  butter to a large sauce pan and cook on medium heat until it melts.
Add the mushrooms sprinkle with salt, the mushrooms will release water, cook it for a while until all the water has evaporated.
Add the chopped onion,add 1 heaping spoon of flour and mix well and cook for 2 minutes.
Add thyme tied up in a string so you can remove it easily once your done, add the garlics, chicken stock and water.
Cook for a while until the vegetables are tender,  you could either add the soup to a blender or use a hand puree to blend it.
Add the cream and bring it back to the heat for 2-3 minutes and serve ūüôā



Beef Stroganoff

Beef stroganoff is the perfect meal for those cold days, you can either eat this with egg noodles or white rice(Both are good!)I cook the beef for hours because it comes out very tender and juicy. Very comforting ¬†ūüôā


a tablespoon of olive oil

1 lb of lean beef cut into strips or chunks

1 medium onion, diced

3-5 cloves of garlic minced

salt and black pepper to taste

1-2 teaspoons of thyme

4 cups beef broth

3 cups of mushrooms

1-2 tablespoons Dijon mustard

3-4 Tablespoons of sour cream

egg noodles or white rice .

In a sauce pan add the oil then add meat and stir , add  onion , garlic  , salt and black pepper to taste and  thyme

add the ingredients to the meat and stir. Add beef broth and cover and cook for 4 hours on low heat.

Cut the mushrooms up into slices , in a pan heat a tablespoon of olive oil  over medium heat and saute mushrooms until golden brown.

Add the beef mixture to the mushrooms and mix well ,add  Dijon mustard , Worcestershire sauce , and sour cream .

Cook the egg noodles according to the instructions on the packet , once the egg noodles are cooked add to the mushrooms and meat and mix well . Enjoy

Nothing like a hot bowl of soup to warm you up during those cold winter days. Instead of going to Panera Bread all the time to  have this soup , I decided to make it at home . I found  a similar recipe online and added my touch to it. Sooo yummy

Broccoli and cheese soup:

1 tablespoon melted butter + 1 tablespoon of butter

1/4 cup of flour

1 cup of milk

1 cup of heavy cream

2 cups of chicken stock

chopped broccoli

carrots sliced

1/2 medium

chopped onion

1/4 teaspoon of nutmeg
salt and pepper to taste

1/2 cup of sharp cheddar cheese

In a medium sauce pan add¬†add 4 tablespoons of butter on medium heat , add the flour and mix with a whisk and cook for 2 minutes . Add the milk and cream and chicken stock bring to a simmer for about 20 minutes.¬†Add the broccoli and carrots , in a separate small pan add 1 tablespoon of butter once the butter has melted add the onions and cook until the onions are translucent¬†. Add the onions to the soup and mix . Add the nutmeg and¬†salt and pepper to taste, cook it for 20 minutes .Add the cheese and mix well . Serve ūüôā¬†
